The harvest takes place in the ideal ripering stage, in mid October, when the parcels and varieties are selected.

With a manual harvest, a great quality wine is obtained, for which it is necessary to choose the grape clusters in the most selective way possible, working from dawn to dusk (avoiding the hottest hours of the day to prevent the unwanted beginning of fermentation), standing up and bending to pick the grapes and taking the carry-cots full of grapes to the tractor.
